Gauge
Gauge is less important than firmness, but your fabric must be dense enough to hide stuffing. On 2.5 mm needles in stockinette stitch, 32 stitches and 44 rows should measure 4 inches.
Knit tightly. The toys in the image have a smooth, refined surface with very little stitch spread, so loose knitting will change the shape and reduce accuracy.
